There is a 'progress wheel' on the right side of the little square swap-dialogue. Click it and update the swap ratio right before you send your transaction. It will fetch the ratio again, and update your UI with the newest swap rate.
When a transaction is rejected in simulation it means that your expected swap is beyond the bounds of what is possible, most likely due to the fact that multiple other transactions have been processed since you got your swap ratio.
Edit; If you do this efficiently you can keep the default .3% slippage.
